Turkey Patties With Pesto Peas

Ingredients

  • 500g turkey mince
  • 1 small zucchini, grated
  • 4 long crusty bread rolls
  • 2 tbsp chopped fresh chives
  • 90g feta, crumbled
  • 450g (3 cups) frozen baby peas
  • 1 tbsp store-bought basil pesto
  • 120g baby spinach and rocket
  • 1 tbsp balsamic glaze
  • 1 tbsp toasted pine nuts

Method

  • Step 1: Grab a colander and place the grated zucchini into it. Use your hands to squeeze out any excess moisture. Once done, transfer this to a large bowl. Add in your turkey, chives and 30g of feta. Season and shape into twelve 2cm-thick patties.
  • Step 2: Next, grab a non-stick frying pan and lightly spray with oil. Place your pan over medium heat. Cook patties for 3 minutes on each side or until golden and cooked through.
  • Step 3: Place the peas in a large saucepan of boiling water. Cook for 3 minutes, drain and return to the pan. Grab a potato masher or fork to mash up the peas, keeping some texture. Stir through the pesto and remaining feta. Season.
  • Step 4: Slice your bread rolls down the centre, making sure not to cut all the way through. Top this with some spinach and rocket, patties, and pine nuts. Drizzle with some balsamic to serve.
