Ingredients

  • 4 skinless chicken breasts
  • 1 whole free-range chicken (cut into pieces)
  • Kosher Salt
  • 8 cups of water
  • 3 red onion, thinly sliced
  • 6 carrots, sliced 1/2 inch
  • 4 garlic cloves, crushed
  • 3 celery stalks, sliced crosswise

Method

  • Step 1: Grab a pot and put your chicken pieces, 1 tbsp of kosher salt and bring it to a boil. Skim foam. Next, add your celery, onions and garlic. Let it simmer, partially covered, for about 30 minutes.
  • Step 2: Remove the chicken breasts and set them aside. Add carrots and simmer, partially covered, for about 40 minutes.
  • Step 3: Remove the rest of the chicken; discard back and wings. Let this cool slightly. Remove the meat from the bones and cut it into bite-size pieces.
  • Step 4: Stir your desired amount of chicken and use the rest for another use. Skim the fat. Season.
