Ingredients

  • 4 pieces of free-range Turkey Maryland
  • 3 garlic cloves, crushed
  • 4 tbsp of chopped parsley
  • 100g unsalted butter, softened
  • Chopped up vegetables for roasting (e.g. potatoes, carrots, pumpkin)
  • Extra virgin olive oil
  • Kosher salt and black pepper for seasoning
  • Marinade: 1 tbsp organic apple cider vinegar, 3 tbsp of extra virgin olive oil, 2 garlic cloves, crushed, 1 tbsp coconut palm sugar, Kosher salt and black pepper (seasoning)

Method

  • Step 1: Preheat oven 180 degrees.
  • Step 2: Marinate your turkey overnight. Grab a bowl and add your soft unsalted butter, crushed garlic and parsley and mix this in. Next, work the butter under the turkey skin pressing it in to ensure this is evenly spread.
  • Step 3: In a baking tray, add in your chopped vegetables and place some olive oil over your veggies. Season this to your liking.
  • Step 4: Bake your Turkey Maryland in a pre-heated oven for 1.5 hrs or until cooked. Add your roasting vegetables into the oven and cook this for the last hour.
  • Gravy: 3 tbsp of your favourite gravy power mix, 2 tbsp of cranberry sauce and 250ml water.
  • Mix ingredients together in a saucepan. Cook on a stovetop until thickened. Serve your Turkey Maryland and veggies onto a plate. Add as much cranberry gravy as you desire.
