Ingredients
- 1 kg of chicken tenders
- 2 large eggs
- 2 1/2 cups of panko bread crumbs
- 1 1/2 cups of all-purpose flour
- 3/4 cup of olive oil
- 1/4 buttermilk
- Extra Virgin Olive Oil Cooking Spray
- 1/4 mayonnaise
- 2 tbsp Dijon mustard
- 2 tbsp honey
- Kosher Salt
- Freshly grounded pepper
Method
- Step 1: Grab your chicken and season it on both sides with salt and pepper. In two shallow bowls, add your panko into one and flour in another. In a third bowl, whisk two eggs and add the buttermilk. Dip the chicken tender one at a time into the flour, and egg mixture, followed by the panko. Pat down the panko.
- Step 2: Work in batches. In the air fryer, arrange the chicken. Don't overcrowd your chicken in the air fryer. Spray the top of the chicken with some cooking spray. Cook in the air fryer for 8-10 mins.
- Step 3: In a small bowl, whisk your mayonnaise, dijon mustard and honey. Season with salt and black pepper.
- Step 4: Grab a platter and arrange the chicken tenders. Serve with some honey mustard.
