Air Fryer Chicken Schnitzel

Airfryer Chicken Schnitzel

Ingredients

  • 4 pieces of free-range chicken breast fillets
  • 2 cups of panic breadcrumbs
  • 1/3 cup of plain flour
  • 1 egg, lightly whisked
  • 2 tbsp milk
  • 1/4 cup parmesan cheese, grated
  • Olive oil spray
  • Lemon wedges, to serve

Method

  • Step 1: Grab your chicken breasts and place them between two pieces of cling wrap. Grab a rolling pin and pound it until roughly 2 cm thick. Repeat the same process with the other 2 pieces of chicken breast.
  • Step 2: Grab a medium bowl and combine your breadcrumbs and parmesan. Grab another medium bowl and add your egg and milk and wish this together. Place your flour on a plate and season. Next, dip your chicken pieces in the flour. Make sure you shake off any excess flour. Dip this into the egg to make sure it is fully coated followed by the breadcrumb mix, Press the breadcrumbs in firmly to coat. Transfer your chicken pieces onto a tray, cover and place this into your fridge for about 15 minutes.
  • Step 3: Preheat your air fryer to 200°C for about 3 minutes. Take your chicken out of the fridge and spray with some olive oil. Arrange 2 pieces in a single layer in the basket of your air fryer. Set your timer for 12 mins, cook and turn then halfway through or until golden brown and cooked through. Transfer your cooked chicken onto a plate and cover this in foil to keep them warm. Repeat the process with the remaining chicken.
  • Step 4: Serve the chicken schnitzel with some lemon wedges and a fresh garden salad.
