Ingredients

  • 4kg Numurkah Turkey Buffe
  • 4 tbsp olive oil
  • 60g butter melted
  • 2 cloves of fresh garlic roughly chopped
  • 6 springs of thyme
  • Sea salt and pepper
  • 2 tubs of turkey stock

Method

  • Preheat oven to 220 degrees. Grab some paper towels and dab the wings until completely dry.
  • Toss the wings with flour, salt and pepper. Don’t forget to remove any excess flour and brush with olive oil. You can also use olive spray if you prefer.
  • Line a pan with some foil and bake for 35 minutes turning them over at 20 minutes.
  • To make the sauce: Half a cup of honey, 4 tablespoons soy sauce, 4 garlic cloves (crushed), 1 tablespoon ginger (finely diced), half teaspoon chilli flakes, ½ cup water and 1 teaspoon of corn starch.
  • Combine the sauce ingredients into a small pan.
  • Bring this to a boil, reduce heat and simmer for about 10 minutes or until the sauce is slightly thickened. To check this, get a spoon and see if the sauce coats it. If it does, it’s ready to go.
  • Take the wings from oven, toss it with the honey garlic sauce and then return it back to the oven for 10 minutes, turning it after 5 minutes.
  • Allow to cool 10 minutes. As the sauce cools, it thickens. Stir the wings every few minutes to coat in the sauce as it thickens. Honey garlic chicken wings are perfect as party wings. Serve them with a veggie plate and mix your favourite greens or veggies like celery sticks, broccoli florets, carrots and a variety of dipping sauces that you love to have. Enjoy!
